Baked Zucchini and Squash

We absolutely love going to our local farmer’s markets and finding random produce. This baked squash dish turned out amazing and we will definitely be making it again soon.



Baked Zucchini and Squash
I'm making it a point to go to more local farmer's markets for my produce.  I found these wonderful zucchini and squash.  I had no idea what to do with them but I had random things left over from other recipes and threw this together.  It turned out really good! ***I sprinkled thyme and rosemary over the pictured dish!***
  • Large Zip loc bag
  • 2 tbsp Olive oil and vinegar dressing
  • Salt and pepper to taste
  • A Pinch of Italian seasoning or any Italian blend
  • 1/4 cup Parmesan
  • 1/2 ts Lemon juice
  • 1/4 cup crumbled Fried Onion
  1. Preheat oven to 450 degrees.
  2. Put Oil and vinegar, salt, pepper, and Italian seasoning in the zip loc bag.  Zip and shake bag to mix.
  3. Cut zucchini and squash into cubes.  Put in the bag with the marinade.  Zip and shake bag over the sink (just in case there is an accident.) to coat each piece.
  4. Let sit for at least 20 min but no more than an hour.
  5. Put in baking dish. Sprinkle with cheese and fried onions.
  6. Bake for 20 minutes.
