Baked Zucchini and Squash

I’m making it a point to go to more local farmer’s markets for my produce.  I found these wonderful zucchini and squash.  I had no idea what to do with them but I had random things left over from other recipes and threw this together.  It turned out really good! ***I sprinkled tyme and rosemary over the pictured dish!***

  • Large Zip loc bag
  • 2tbsp Olive oil and vinegar dressing
  • Salt and pepper (to taste)
  • A Pinch of Italian seasoning (or any italian blend)
  • 1/4 cup Parmesan
  • 1/2ts Lemon juice
  • 1/4 cup crumbled Fried Onion
  1. Preheat oven to 450 degrees.
  2. Put Oil and vinegar, salt, pepper, and Italian seasoning in the zip loc bag.  Zip and shake bag to mix.
  3. Cut zucchini and squash into cubes.  Put in the bag with the marinade.  Zip and shake bag over the sink (just in case there is an accident.) to coat each piece.
  4. Let sit for at least 20 min but no more than an hour.
  5. Put in baking dish. Sprinkle with cheese and fried onions.
  6. Bake for 20 minutes. Let cool and serve.
