Yummy Zucchini Lasagna

Lasagna is a delicacy! Why not substitute the pasta with zucchini? Well, that is exactly what we did! Instead of beef, we use ground chicken. What a great way to not feel guilty about indulging in this hearty tasting dish!

Yummy Zucchini Lasagna

I love to play with veggies! Especially substituting them for pasta!

Ingredients
  • 4-6 Medium Zucchinis thinly sliced longways
  • 1 Onion Diced
  • 14 oz Tomato Puree
  • 2 tbsp Chopped Basil
  • 1 Cup Ricotta
  • 1 Cup Mozzarella
  • 1 Cup Pecorino Romano
  • 2 tbsp Butter
  • 1 lb Ground Chicken
  • 5 Cloves Minced Garlic
  • 1-3 tbsp Granulated Sugar
  • 1 tbsp Red Wine Vinegar
Instructions
  1. Heat pan on medium heat. Add Butter.
  2. Cook meat, onion, and garlic until the meat is done.

  3. Preheat oven to 375 degrees Fahrenheit.
  4. Add tomato puree to the meat mix.
  5. Add basil, sugar, and vinegar.
  6. Cook until reduced slightly.
  7. Grease a 13x9 baking dish.
  8. Make layers. Meat mix, cheeses ( I layer them individually but you can mix them together), then a layer of the sliced zucchini.

  9. Repeat. End with the layer of cheeses.

  10. Cover with foil and bake for 45 minutes. Remove from oven. Uncover and bake for an additional 15 minutes.
