Lamb and Buffalo Meatloaf

 Using lamb and buffalo is a game changer for the classic meatloaf dish. Give this a try! There is just something so tasty about buffalo meat.

Lamb and Buffalo Meatloaf

Meatloaf seems to be a staple in most households. This is a slightly different take on the classic recipes most of us are used to following.

  • 1 lb Ground Lamb
  • 1 lb Ground Buffalo
  • 3/4 Cups Bread Crumbs
  • 2 tbsp Worchestershire Sauce
  • 1 tbsp Chopped Rosemary
  • 1 Red Onion Diced
  • 2 Bell peppers  any color Diced
  • 1 tbsp butter
  • 6 Cloves of Garlic Minced
  • 1 Large Egg Beaten
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Drizzle of Molasses
*Optional Sauce*
  • 1/3 cup Ketchup
  • 2 tbsp Brown Sugar
  • 1 tbsp Yellow Mustard
Mix all 3 ingredients and sit to the side.
  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Heat a saute pan over medium heat. Add 1 tbsp of butter.
  3. Add the peppers, garlic, and onion. Salt and pepper them if you desire (I do).
  4. Saute them until everything is tender. Set them to the side in a large bowl and let them cool for 10-15 minutes.
  5. Add Worcestershire sauce, 1/2 tsp salt, and 1/4 tsp pepper to the veggies.
  6. Stir in bread crumbs, egg, molasses, and rosemary. Then mix well.
  7. Add meat and mix by hand.
  8. Form the meat into a loaf on a large baking sheet (line with foil for an easy cleanup).
  9. Layer the top of the meatloaf with the optional topping (if you desire).
  10. Bake about 45 minutes or until the center reaches 165 degrees Fahrenheit.
  11. Let rest for 10 minutes and then serve.
