Grilled Chicken and Cauliflower Mash is such a good dish. You won’t even miss the mashed potatoes!

 

Josh came up with this dish on a whim and I am so glad that he did! We do not feel bad eating this meal at all but at the same time, it has all of the flavors of a “bad for you” meal. This meal is surprisingly easy and quick to make as well! (what an added bonus!)

Grilled Chicken and Cauliflower Mash

This is a great healthier alternative to the classic chicken and mashed potatoes meal!

Ingredients
  • 1 Chicken Breast per person
  • 1 Pkg of Frozen Mixed Vegetables
  • 4 oz Sliced Mushrooms
  • 2 tbsp Butter
  • 1/4 cup Flour
  • 2 Cups Beef or Chicken Broth
Thyme for Garnish
Instructions
Chicken:
  1. Season Chicken.

  2. Heat Grill.
  3. Cook until done.

Veggies:
  1. Sautee in 1 tbsp Olive Oil until done.
  2. Salt and pepper to taste.
Cauliflower Mash:
  1. Wash the head of cauliflower.

  2. Boil until soft. 20-30 Minutes.

  3. Drain and chop.

  4. Add butter, salt, and pepper.

  5. Blend. We used an emulsion blender.
Mushroom Gravy
  1. Wash mushrooms.

  2. Slice mushrooms.

  3. Sautee mushrooms and garlic.

  4. Add broth.

    chicken
  5. Whisk in Flour.

  6. Let cook until desired thickness. Salt and pepper to taste
