Loaded Potato Soup

 

Loaded Potato soup is such a flavorful meal. I find it is also one of our go-to pantry soups.

Sometimes a change up on a loaded baked potato is welcomed. This variation is hearty and delicious it really is a must try soup!

Loaded Potato Soup

This soup is so amazing and hearty! The perfect choice for a chilly day!

Ingredients
  • 1 stick butter
  • 8 MD-LG Russet Potatoes
  • 64 oz Chicken Broth
  • 1 Md Onion Diced
  • 6 Cloves Garlic Minced
  • 6-8 Slices of Thick Cut Bacon
  • 1/2 cup Heavy Cream
  • 2 Cups Mild Cheddar Cheese Shredded
  • 1/4-1/2 Cup Sour Cream
Salt and pepper to taste
Scallions for garnish
Instructions
  1. Wash and peel the potatoes.

  2. Cube the Potatoes

  3. Pour the broth into a large soup pot.

  4. Add cubed potatoes.

  5. Bring to a boil. Boil for 20-30 minutes and potatoes are soft

  6. Add Salt and pepper if you desire
  7. Chop raw bacon and cook it in saute pan over medium heat.

Remove with a slotted spoon. Use this pan to make onion paste.
  1. Drain the potatoes but save the broth in a bowl.

  2. Return the potatoes to the soup pan and add butter.

  3. Mash potatoes until smooth.

  4. Add broth back 1 ladle at a time until desired consistency is achieved.

  5. Bring soup to a simmer.

  6. Add Cream.
    potato
  7. Add Cheese.
    potato
  8. Add Onion Garlic Paste.

  9. Add Sour Cream.
    potato
  10. Salt and pepper to taste
  11. Simmer for about 20 minutes.
  12. Garnish with sour cream, scallion, cheese, and bacon.

Recipe Notes

**Make Onion Garlic Paste**

Sautee Onion over medium until translucent.

Add garlic and cook for 2-3 minutes.

Remove pan from heat and let cool for 10-15 minutes.

I used an emulsion blender to make the paste.

This wonderfully filling loaded potato soup is gauranteed to hit the spot!
