Homestyle Spaghetti
I love to make Spaghetti.  This is a recipe that I just made up.  It is so much fun to go to local produce vendors and get the freshest ingredients.  I usually grab an assortment of tomatoes.  I never make this the same way twice.
Ingredients
  • 4 Vine Ripe Tomatoes
  • 1 Package of Cherry Tomatoes
  • 4 Slicing Tomatoes
  • 4 Bell peppers I like assorted colors
  • 1/2 Red Onion diced Separated into 1/4 cups
  • Basil eyeball
  • Italian Blend season to taste
  • Sweet Italian Sausage Ground or taken out of the casing
  • 1 cup Parmesan
  • 1 ts minced Garlic
  • 1/2 ts Garlic Powder
Bread:
  • French Bread
  • Garlic butter you can make it or buy it
  • Garlic Powder
Instructions
  1. Chop Large tomatoes into quarters and set to the side.  Chop peppers.

  2. Heat skillet to medium heat with 2tbsp olive oil.  Add peppers and onions.  Add garlic when almost done.

  3. In a Large soup pan heat tomatoes to boiling and let cook down for 20 minutes.  I leave the skin on.  Add 1/4 cup onion to mix.

  4. Add Italian blend, salt, pepper, and a pinch of basil to tomatoes.
  5. Add meat to the vegetable blend and cook until browned.  I usually add a little basil, salt, and pepper at the stage.

  6. After the tomatoes cook down for 20 minutes use the emulsion blender.  Blend until smooth.  Sometimes I add tomato paste or sauce depending on the flavor the tomatoes.  Add Garlic powder.

  7. Add Parmesan to sauce and stir.  Salt and pepper to taste.

  8. Cook the noodles according to package directions.  I have started adding basil and garlic to the boiling water and it gives a nice subtle flavor to the noodles.  Also, don't forget to liberally salt the water the noodles boil in.

  9. Add the meat mix to the tomato sauce.  I like my sauce to be proportionate so this means sometimes I have to discard some of the tomato sauce to avoid the end result being to saucy.

  10. Put Noodles in a bowl and cover with sauce.  Add parmesan on top!

  11. Garlic Bread:
  12. Heat oven to 350 degrees.
  13. Cut bread into thick slices.

  14. Spread butter on top and sprinkle with a slight bit of garlic powder.

  15. Bake for 10 minutes.
